What to eat in Hakata before or after a Fukuoka fireworks festival

If you are in Fukuoka for a fireworks festival, you are also in one of Japan’s best food cities. The yatai stalls at the venue are fun, but Hakata ramen and motsu nabe deserve a proper sit-down. Here is where to start.

Hakata ramen

Fukuoka’s ramen is the tonkotsu style: rich, milky, pork-bone broth with thin straight noodles, chashu pork, and pickled ginger. It is different from the tonkotsu you might get elsewhere — the original is more intense, cloudier, and often served with the option of kaedama, where you order an extra portion of noodles to finish in the remaining broth.

Where to go

Shin-Shin — one of the most respected tonkotsu shops in the city. The broth is clean and balanced. Multiple locations including near Tenjin.

Ichiran — the national chain started here in Fukuoka. You eat alone in a small booth — a focused experience.

Ganso Nagahama Ramen — the old-school option, open since the 1950s. Very simple menu, very cheap, and the broth is intense. The Nagahama neighbourhood is also where the fish market is.

Motsu nabe

Motsu nabe is a hot pot made with beef or pork offal, chives, cabbage, and firm tofu in a soy or miso-based broth. Fukuoka’s other signature dish. The offal is mild when cooked — tender, rich, and absorbs the broth beautifully. Most restaurants also serve chanpon noodles to add at the end, to soak up the remaining broth — order it.

Hakata yatai (permanent outdoor stalls)

Separate from the festival stalls, Hakata has its own permanent outdoor yatai along the Naka River and in the Tenjin area — small open-air counter stalls, each seating around 8 to 10 people. They serve ramen, yakitori, gyoza, and oden. Something unique to Fukuoka; most Japanese cities do not have anything like it.

Timing

  • Before the fireworks: eat by 5 to 6 pm, then head to the venue. Most major Fukuoka fireworks start around 7:30 to 8 pm.
  • After the fireworks: ramen shops near Nagahama and Tenjin stay open late. The permanent yatai along the river also open after sunset.
